About the Chef

Chef Akram Sultonzoda is Executive Sous Chef at Kuredhivaru Resort and Spa Maldives. His Spring Collection submission places him firmly within the language of modern resort gastronomy: seafood-led, precise, restrained, and built around contrast rather than excess.

For Nature’s Premiere 2026, Chef Akram does not approach spring as a soft or decorative season. His own prologue describes spring as unstable — a moment when ingredients appear at their peak and disappear quickly, leaving no room for repetition, only adaptation.

That thought gives the menu its structure. Delicate seafood is supported by deeper elements: jus, umami, caviar, morel, shellfish foam, squid ink, and cassis. The result is a menu that does not simply celebrate freshness. It studies tension: lightness against depth, acidity against richness, control against nature’s unpredictability.

About the Resort

Kuredhivaru Resort and Spa is a private island retreat in the Maldives, set on Kuredhivaru Island in Noonu Atoll. The resort is positioned as a five-star luxury beach resort, with beachfront and overwater villas designed around privacy, ocean views, and a close connection to the surrounding island landscape.

Located in one of the Maldives’ most pristine atolls, the resort combines beach and overwater accommodation with spa, fitness, diving, watersports, family facilities, and a wide dining programme built for both couples and families.

In the context of Nature’s Premiere, Kuredhivaru offers a very particular kind of stage: not an urban dining room, but an island environment where ocean, sky, privacy, and service shape the guest experience before the first course arrives.

Spring Inspiration

Chef Akram’s spring menu is built around contrast. Seafood gives the menu its immediacy, while morel, jus, caviar, squid ink, and Wagyu bring structure and depth. In his own words, the menu explores lightness versus depth, freshness versus structure, with caviar and umami-driven elements bridging the intensity of winter and the delicacy of spring.

The signature idea appears most clearly in Langoustine & Squid Ink Spaghetti with Sturgeon Caviar and Shellfish Foam. Chef Akram describes the dish as the ocean, held in tension: langoustine sweet and fragile, squid ink dark and saline, caviar adding precision and quiet luxury.

This is a fitting expression for a Maldivian island resort. The ocean is not used as scenery; it becomes the central voice of the plate. Carabinero prawn, langoustine, turbot, and shellfish appear alongside pomelo, fennel, lemon zest, and light seafood jus — ingredients that give the menu brightness without making it fragile.
