About the Chef

Michelangelo Mammoliti belongs to a generation of chefs who combine classical discipline with a deeply personal vision.
Born near Turin in 1985, Mammoliti refined his craft in some of Europe’s most influential kitchens, working alongside figures such as Gualtiero Marchesi, Alain Ducasse, Pierre Gagnaire, and Yannick Alléno — chefs who shaped modern gastronomy through discipline, vision, and precision. In these environments, structure and technical mastery became second nature.
Yet what defines his cuisine today is not the weight of those names, but the way he transforms that foundation into something entirely his own — more instinctive, more personal, and deeply connected to nature.
At La Rei Natura, Mammoliti cooks with memory, raw material, and sensation. Ingredients are not simply selected; they are explored, listened to, and placed into dialogue with place, emotion, and time.
There is clarity in his cooking, but never rigidity. His dishes feel composed, yet alive — balancing instinct with control, and precision with feeling. It is this balance that defines his voice: a cuisine that is both intellectual and deeply human.

About the Restaurant

Set among the rolling vineyards of Serralunga d’Alba, La Rei Natura feels inseparable from the Langhe that surrounds it.
Light, landscape, and seasonality do not sit outside the restaurant — they move through it. From the first welcome to the final moment of the patisserie, the experience unfolds as a continuous journey, where each space carries its own rhythm yet remains part of a single, fluid composition.
There is a quiet coherence to everything here. Materials, colours, the presence of the brigade, the relationship between kitchen and dining room — all reflect the same philosophy: that nature is not an influence, but the foundation. At La Rei Natura, the experience is not built around a sequence of courses, but around a sense of flow — where atmosphere, service, and cuisine speak the same language.

Spring Inspiration

At La Rei Natura, spring is not expressed through a single narrative, but through three distinct interpretations of the season.
MAD100% Natura is the most instinctive. Ten free-hand creations, shaped entirely by the chef, where the vegetal world becomes the central focus. It is an evolving expression — one that reflects not only the season, but the ongoing development of Mammoliti’s cuisine.
Emozione explores the sensory dimension of food. Built around the idea that flavour is experienced first through the mind, it moves through a sequence of dishes designed to provoke, surprise, and engage on a deeper level. Each course becomes a moment of perception — where taste, texture, and memory intersect.
Voyage extends beyond the immediate landscape. It draws on flavours encountered through travel, translating them into a language that remains coherent with the chef’s identity. Bangkok, the Levante, Provence, Valencia — each reference appears not as imitation, but as memory transformed.

Together, these three menus form a complete portrait of spring: rooted in nature, shaped by sensation, and expanded by movement.
